I was too overwhelmed with other things to do this book justice, but there are many ways to cook squash, for example. I think this is a pretty good book, but be warned, it is thick (at least it is softcover though)!

This book was update nicely from the original Laurel's kitchen. I like that it isn't emphasize dairy as much, and still remained true to it's informative nature on the basics of cooking and vegetarian cooking.

This book is a great place to begin for vegetarian diet information. It is pretty hefty in size, and could be intimidating to someone who is a new vegetarian, or just checking it out, but I think it has so much basic cooking and nutrition information it is, that even someone who isn't vegetarian but loves to cook would enjoy it and benefit from it.

Who knew vegetarians had the best gravy. Comprehensive and very very yummy. All you need to know to cook vegetarian well.
